Ingredients for better
- Gram flour (Besan) : 3 cup
Eno : 1 & 1/2
Salt : 1 tsp
Turmeric powder : 1/2 tsp
Sugar : 1 tbsp
Refined oil : 2 tbsp
Green chili : 3 (paste)
Ginger : 1 inch piece (paste)
Lemon juice : 1 tbsp - water 2 1/2 cup
- Refined oil : 2 tbsp
Mustard seeds : 1 tbsp
Sugar : 3-4 tbsp (according to taste)
Citric acid : 1 tsp
Green chili : 3-4
Coriander leaves : 2-3 tbsp
Water : 2-3 cup - curry leaves 6-7
- Take a bowl and add the gram flour, sugar, iemon juice and the lukewarm water.
Whisk everything well, making sure there are no lumps left and the batter is smooth in texture.
Let the batter soak for atleast 15-20 minutes. - Take a pot of water, place a ring inside it and out it to boil. Cover the pot with the lid.
Add the turmeric powder, salt to taste, ginger and chilli paste and little oil to the batter and mix all the ingredients well. - Add 1 tsp of fruit salt to a portion of the batter and mix gently. Pour the batter immediately into a greased 125 mm. (5") diameter thali and spread evenly by rotating the thali clockwise.
Steam in a steamer for 15 to 20 minutes or till the dhokla are cooked. Keep aside. - Separate the dhokla from the tin by using a knife.
Overturn the dhokla on a plate. Overturn it again. - Heat 3 tsp of oil in a small pan and add the mustard seeds.
When the seeds crackle, add the Green chilli, and curry leaves, mix well and sauté on a medium flame for a few seconds. - Remove from the flame and add 1½ tbsp of water and mix well.
Pour this tempering over the dhoklas.
Cool slightly and cut into equal sized pieces.
Serve hot garnished with coriander.
